The Normandy Presents Healthy Holiday Hors d’Oeuvres

DSC_3552-11The Normandy Apartments of Rocky River teamed with Cleveland Clinic nutritionist Maxine Smith, RD, and Executive Chef Cedric Geeter last week for a presentation on Health Holiday Hors d’Oeuvres.

“You can enjoy holiday foods and these foods can also be healthful and delicious at the same time,” said Smith, a licensed dietician with the Clinic.

DSC_3563-13Geeter, degreed by the Pennsylvania School of Culinary Arts, provided the expertise as he whipped up four simple but delectable dishes for all to enjoy. They included Prosciutto Croatini with Lemon Fennel Slaw, Chicken Salad Stuffed Tomatoes, Mini-Brie and Apple Quiches and Mango Shrimp in Endive Leaves.

Maxine provided nutrition information on all the tasty recipes while Geeter shared kitchen secrets on preparation and where to get the best ingredients. A great way to enjoy the holiday season with healthy, nutritious foods!
